OMG! Vegan curry recipe!!

    I was so excited to share this recipe that I found on Detoxinista.com For the recipe, click here. It is a lentil, sweet potato, coconut curry.  I try to eat a very plant strong diet so sometimes I get a wild hair and go vegan with a few meals. This one ROCKS!!! (I even went for a second helping!!). Here are the ingredients:

(Not pictured is the quinoa leftovers from yesterday that I added on the bottom of my bowl before I ladled the final product into my bowl.) 

The hardest part of this recipe was chopping up the onion. ? Sautee the onions in the coconut oil for a few minutes:  

Add the lentils, chopped sweet potato, carrots, and spices:

  

Add it to a pot of 3.5 cups of vegetable stock. 

 Bring to a boil and then simmer for 25 to 30 min. (Till sweet potatoes and lentils are tender)

  

Add in a half cup of coconut milk (I used the full can!!) and then salt and pepper to taste. 

  

Enjoy.  I did.
