Here’s a yummy recipe that is way easy to make, not to mention gluten free and rich in fiber!
Ingredients:
- A bag of quinoa
- 2 heads of broccoli
- 1 cup shredded cheese of your choice
- Salt, Pepper, dried thyme, oregano and basil (to season the chicken)
Instructions:
- Preheat oven to 350 degrees
- Cook quinoa serving according to package directions (This quinoa recipe called for 1.5 cups of the quinoa rinsed, drained and cooked in chicken broth)
- Chop up broccoli and steam on the stovetop
- Season chicken breasts with salt, pepper, thyme, oregano and basil.
- Pan fry chicken until cooked through. Then cut up into small chunks.
- Spray coconut oil on bottom of casserole dish.
- Combine quinoa, chicken and broccoli into dish and top with shredded cheese.
- Pop into oven for 10-15 minutes to let the flavors come together and for the cheese to melt.
